The other day, I found myself craving a classic childhood treat: Nutter Butters. When I was a kid, I loved getting a package of Nutter Butters as an after school treat. If you’ve never had a Nutter Butter, it’s a soft, peanut-shaped cookie sandwich filled with creamy peanut butter. And let me tell you… it is absolutely delicious.

But, one thing that I don’t love about Nutter Butters? The ingredient list. They are not the healthiest cookie in the world, and as someone who has learned the hard way that eating high-sugar, processed snacks doesn’t make me feel good, I had to learn how to make a healthier alternative for those moments when the cravings strike. Luckily, this recipe fits the bill.

These better-for-you Nutter Butters are made with just four simple ingredients (5 if you want to get fancy!) and are perfect for keeping on-hand as a healthy dessert or snack. They stay good in the fridge for two weeks, or in the freezer for two months, so they’re perfect for batching ahead of time. But be warned, you’ll want to eat the whole tray in one sitting!

What You need to Make These Healthy Nutter Butters

  • Oat Flour: Did you know that oat flour is super easy to make from home? It’s true! With just a few simple ingredients, you can have homemade oat flour ready in a pinch.
  • Almond Flour: Almond flour is packed with protein and healthy fats, making it the perfect healthy swap for traditional flour, in these cookies!
  • Vanilla Extract: This is optional, but I love adding in vanilla extract to make these cookies taste like they’re fresh from the bakery!
  • Maple Syrup: A touch of maple syrup makes these cookies perfectly sweet, without making them too sweet.

How to Make These Better-For-You Cookies

To make these Nutter Butters, start by preheating your oven to 350 F. Next, add the oat flour, almond flour, vanilla extract (if using), maple syrup, and peanut butter into a large bowl. Stir until fully combined and a thick batter is formed. Then, line a baking sheet with parchment paper.

Use your hands to scoop two, teaspoon-sized balls of the dough and roll them separately. Then, place them onto the baking sheet so they’re touching each other. I recommend following the video so that you can see exactly how to do this! Repeat until all the dough has been used and 16 cookies have been formed. Then, use a fork to create a cross-hatch pattern across the tops of the cookies.

Place the cookies into the oven and bake them for 9-10 minutes. Once they’re done, remove them from the oven and allow them to cool completely. Once the cookies are cooled, spread peanut butter on the undersides of each cookie and press two of them together in order to form a sandwich.
